Fried Karela( Bitter gourd) Masala

Ingredients:   Method:
1/2 lb Karela (bitter Gourd)
1 big onion chopped
1/4 cup mustard oil
I big tomato
1 whole red chili
1/2 tsp red chili powder
1 tsp coriander powder
Salt to taste
Mustard Oil to deep fry

Wash Karela thoroughly, peel, dry and make round slices. Don't throw away the peels. Put the peels in salt mixed water seperately.


Heat oil in a pan. When it becomes smoking hot then reduce the heat to medium and deep fry the Karela slices till light golden in color. Drain and keep aside.


Put onion Karela peels and whole red chili in oil and fry until onion becomes golden.


Add Salt red chili powder and coriander powder. and fry for a minute.


Add chopped tomatoes and Karela slices and cook for 5 minutes.


Serve hot with your favorite bread.

Karela (bitter gourd) is a bit bitter but it is a very nutritious and healthy vegetable.
