Dhokla

 

Ingredients:   Method:

1 cup gram flour
1 cup warm water
1/2 tbsp sugar
1/2 tsp citric acid
1 tsp soda bicarbonate
1-2 green chilies
1/2" piece ginger grated
1 pinch turmeric powder for color
salt to taste

 

1/2 tsp mustard seeds

1 tbsp oil.

1/2 cup grated coconut

A little chopped coriander

 

Mix a little of water, sugar and citric acid in a small bowl.  Pour a little of the water over soda bi carb in another bowl.

 

Mix remaining water, gram flour, chili and ginger. Mix well till smooth. Add sugar solution and turmeric powder to batter. Mix well. Put a pressure cooker on heat with 1 inch water and stand.

 

Grease a round thali or cake tin. Add soda solution to batter and mix well. Pour into prepared thali immediately. Cover thali with a mash lid and close the cooker.

Cook without the whistle for 13-14 minutes. Remove thali and allow it to cool. Cut in cubes.

 

Heat oil in a small pan. Add mustard seed. Pour over the dhokla cubes. Garnish with coconut and coriander.

Serve with green chutney
