Kesaria Meetha Pulao

2 cup Basmati Rice
4 tbsp Ghee
2 cups sugar
1 cup milk
10-15 strands of Saffron
1/4 cup Raisins
1 tbsp Almonds
1/2 tbsp Pistachio nuts
5 Cardamoms
4-5 cloves
2-3 bay leaves
1 small cinnamon stick

Wash and soak rice in water for 1 hour.
Heat ghee and fry cloves, cardamoms, bay
leaves for 1 minute.
Add rice and fry it gently for 3-4 minutes.
Add 4 cups of water and boil it. Cook covered on medium low heat
till 3/4th done.
Meanwhile mix sugar in milk and stir until
sugar dissolves. Crush saffron strands with 1 tbsp of milk
and add it to sweet milk.
Add dry fruits and sweet milk to rice and
mix gently. Cook again until rice is done.
Decorate with few slivered almonds.
